Known for its relaxed atmosphere and Australian charm, Bills has become a beloved all-day dining destination in Japan. Founded by restaurateur Bill Granger, the first location opened in Sydney’s Darlinghurst in 1993, with the Japan debut in Shichirigahama in 2008. Now with eight locations nationwide, Bills is known for fresh, feel-good dishes that celebrate simplicity, flavor, and a warm welcome.
Starting on April 22nd, all Japan locations will unveil the Spring/Summer 2025 menu, themed “Mediterranean Comfort Food.” Inspired by the dining culture of coastal Europe, the seasonal offerings highlight health-conscious ingredients, bold herbs, and vibrant produce—ideal for long lunches and relaxed gatherings.

New savory dishes include a puy lentil salad with beetroots, creamy ricotta, and gremolata (2000 JPY), a summery peach and tomato salad topped with baked ricotta (1600 JPY), and a hearty seared rump steak with wild rocket and salsa verde (4600 JPY). Additionally, a fresh pasta dish with broad beans, peas, and pistou (2400 JPY) offers a light yet satisfying meal, perfect for warm-weather dining.

On the sweet side, the upside-down pineapple tart with coconut semifreddo offers a tropical twist, while the dark chocolate cashew mousse with salted hazelnut praline is a rich yet dairy-free treat. Both are priced at 1400 JPY.

Plant-based diners will find plenty to enjoy: several dishes, including the lentil salad, pasta, and chocolate mousse, can be made vegan or are vegan by default. For instance, chilled green tea noodle bowl with sesame avocado and warm shiitake dashi (2000 JPY) offers a nourishing, umami-packed option with a vegan variation available.

New seasonal drinks round out the experience. The homemade limoncello spritz (1500 JPY) and sake rossini featuring house sake and fresh strawberries (1400 JPY) are ideal for warmer days, while the pineapple shrub (900 JPY) and mandarin highball (1200 JPY) provide non-alcoholic options.
